I'm not sure if that is true, but live octopus (octopi?) are considered a delicacy in some Asian countries, especially Korea.
The octopus gets wrapped around chopsticks with a special technique and consumed alive. If eaten incorrectly, it can cling to the inside of the throat and cause choking! This results in a surprising number of deaths annually.

Yes, live octopus eating is a thing in Korea. However this dish involved a fresh but dead octopus. The muscles temporarily fired up/expand once the sodium from soy sauce seeped inside. Try purchasing fresh octopi and a bottle of soy sauce if you are curious ;)

ah, interesting octopi experiment. i may try it, but then i'd have to eat it after because i can't waste food (though i have eaten mini grilled intact squid at a Korean bbq joint not too long ago)
oh, man. i've never eaten frog legs, but i've been curious in the past. after watching the video you posted, not so sure...

Considering the octopus' head is chopped off right above eye level and filled with sauce, I'd say you're correct. The head is where all of their internal organs are located, so he was basically eviscerated.
